Allka Koumar - Artisanal Baker

It is a pleasure to feature an astonishingly talented baker ‘Allka Koumar’ who owns "Foodies Bassket" brand of artisanal bakes and is also a resident of Buzzytown cluster 1 

A little about Allka 

Allka comes from a defence background and has lived in many parts of the country. Travelling across India gave her exposure to different cultures and she is immensely proud of our national diversity. Allka has experienced both the joys and challenges of moving locations. On the one hand, she has experienced the length and width of the country and on the other, she had to give up an opportunity of being an Air Hostess for Jet Airways due to her father's transferrable job. Later on, Allka completed her education, got married and shifted to Mumbai permanently.  She now has two lovely daughters.  

From banker to baker

Allka started her career at ICICI Bank and later also worked with other private sector companies. Being from a defence background gave her the opportunity to taste cuisines of different parts of India from where her interest in food started. Allka is a frequent traveler and a vegetarian. One of her biggest challenges was to find eggless cakes as she travelled around the world. This inspired her to step into the culinary world and her journey of transforming from a banker to baker started.

Strength to strength in baking

After living in Mumbai for a while, Allka felt that while life was smooth and settled, she would sometimes sense something missing. Having already tried her hand at baking, she slowly started baking for family and friends. One day, a close friends suggested that she evaluate taking a professional baking course. Allka followed the idea through and today stands before us as a professional baker with over 10 years of experience.

A cake for Tirupati

While Allka is known for baking uniquely shaped cakes, a truly proud moment for Foodies Bassket (Allka’s brand) was when her cake left for Tirupati. It was a Gajar ka Halwa with cream cheese and pistachios cake with strawberry filling. Allka has been sending Tirupati cakes for three years now.

Celebrity Cakes

Allka has also baked on request from celebrities. She had once made a rasmalai cake made with homemade ingredients for the Lamborghini song celebrity "Harshada Vijay”. Allka has also made really interesting bizarre, naughty and prank cakes on demand.

Eggless and vegetarian

Allka prides herself in creating cakes and baked items that are eggless and yet have a great texture. She has used many advanced baking techniques to perfect other eggless products like donuts, cookies, brownies and breads. 

Fun Fact 

A surprising fact about Allka is that Allka loves things like horse riding, sky diving, bungee jumping and her biggest wish is to own a Harley Davidson or Royal Enfield someday.  Allka also loves shooting and has tried her hand at free air shooting.

Tip for success in baking

Allka strongly feels that fresh and good ingredients lead to great recipes. She suggests having a sense of proportions so that modification while cooking and mixing is possible.
