A little about Ananya
Ananya belongs to an orthodox family of judges and lawyers and followed the family tradition of walking the corridors of the courts early in her career. She realized that this was not something she wanted to do forever and initially took to painting and had shows all over the world, including Paris. But after a while she realised that she had to do something else to be completely satisfied.
How did you get into food as a profession Ananya?
My journey into food as a profession started with a love for cooking that was sparked early on by my family, especially my grandmother and mother, who were incredible cooks. They not only introduced me to the flavours and techniques of Bengali cooking but also taught me the finer skills of preparing ingredients with care and precision.
How did you add global cuisine to your range of offerings?
Watching my mother and grandmother cook and learning their methods made me realize how food could convey stories, emotions, and traditions, and that made lasting impact. Over time, I became deeply curious about cuisines from other regions and countries. This led me to explore and learn a variety of culinary styles, from Indian regional flavours to global cuisine.
What are your personal favourite dishes?
The featured picture is called Bengali Bhuribhoj or feast and this is a personal favourite!
It includes succulent dishes like the Phuchka shots, beetroot croquettes, bhetki paturi (Bhetki fillet in mustard sauce wrapped in pumpkin leaves), kosha mangso (slow cooked iconic Bengali mutton in thick gravy, prawn malai curry , Lebu pata bhat (Gondhoraj lemon flavoured Gobindobhog rice cooke with lemon leaves), Aaam papad & dates relish, Patisapta (Bengali version of French crepe with coconut & jaggery filling).
You have gone beyond just cooking. Tell us a little about that.
Cooking has been a long and very satisfying journey. I have written two very successful cookbooks – Bangla Gastronomy & Planet Gastronomy (100 most popular global recipes.) I was anchor chef for various prestigious TV shows like ‘Made in Bengal’ on Travel XP (UK based channel). I am active on social media platforms and my IG handle is hugely popular. I keep a very busy schedule as I conduct pop-ups and chef’s table on a regular basis in prestigious 5 star hotels & premium clubs on a regular basis.
